The last two months

I didn't even realize it had been two months since I updated this until I looked at the date of my last post. To me it seems like a lot has happened, but on the other hand it really seems like nothing exciting or newsworthy has happened. However, last week I recieved the news the I am going to be able to stay at Disney for the spring semester. I'm really excited about this even though I know it's going to be a completely different experience. There will be a lot of new people at work and at church, but the good news is I already know all the regulars so at least they will stay the same. I also didn't feel like dealing with snow in January. I can't wait to see what the new year will bring and I'm also excited the get the holiday season over with...the guests are kinda crazy...

By the way, its not that I don't love the holidays, theres just not much to look forward to since I have no family down here and I'm not able to go home. I didn't mind it too much for Thanksgiving, but I really hope this is the only Christmas I have to spend away from family.

I already have my mind set for the New Year, in fact I have already started working on my new years goals. For the last little while I have been thinking a lot about the goals I have and they all seemed really overwhelming. A month of so ago Elder Bendar came to speak to the young single adults in the area and he said something that really stuck with me. He did a Q&A and a girl asked him about getting her life in order and long story short what he told her was that she just needed to pick something and get started. So I have decided to apply that to my life. The first goal I picked was simple, it is to always use the stairs. This one has been really easy to stick with and I hope it helps in the long run. I'm actually trying to expand this goal to climbing to top the stairs (8 floors) twice a day, but I have yet to begin this one.

I should mention that my overall goal is the live a healthier life style, which is what inspired me to make my next goal. I have decided to give up candy and ice cream. Anybody who knows me know that this is a huge thing for me and its going to be really hard to keep, so please don't tempt me. I actually started this goal on Friday and I still have yet to eat a piece of candy or ice cream. Just so you know I have not ruled out all forms of sugar like desserts, but I'm planning to once the holidays are over. (Lets face it, people bring in great desserts for holidays and they are to hard to resist)

Well that was my past and present goal, and now for my future goal. This goal is to eat all home cooked or fresh meals. I have been putting this off because A- the pots and pans we have at my apartment are not non stick and hard to cook in and B- I havn't wanted to buy things that take time to use up like flour, sugar, meats, seasonings...but in light of recent events (me being in florida at least six more months) I've decided to work on stocking up on foods and probably buying better pans and cookware. Oh yeah, and if anyone has any ideas for good things to cook for one person that would only create left overs for a day or two, let me know.

Ok, that's enough of that...I have loved being down here at Disney World. In October my sister's family visited me and it was so fun to experience the parks with Colby and Carter. They both change so much everytime I see them, its crazy to see how quickly kids learn and grow. Colby overcame his fear of characters, which was great because we got lots of good pictures of him with everyone. Woody was the coolest because he sat down on the ground (which was no easy feat for him) to get a picture with Carter. Carter was all smiles. Speaking of, Carter has the most heart melting smile I have ever seen. He should really enter some sort of baby contest or something. Anyway, we all had a lot of fun, experienced a lot of rides and had some good times.

My parents visited a couple weeks ago which was a lot of fun for me to. They stayed for 7 days and I was able to do things like experience Mickey's Very Merry Christmas Party and eat at some places I had been wanting to go to. My dad also fixed my TV so now we get the Disney Channel, which made me so happy! It was a little easier keeping up with my parents than it was with two little boys, and the weather was a lot cooler to. It was nice to have to wear jeans and sweatshirts.

Well I think I have covered enough for one night. Hopefully I can keep up with this a little better in the future.

  1. Thanks for posting! I love keeping up with your adventures! I am also trying to live a healthier life style, I don't know if I can give up the candy, but I am at least going to try to work out six days a week! Good luck with all your future plans!

  2. 0o0o0o Elizabeth. You are so good. Once you start working out and eating healthy you do a good job of sticking to it! I wish I had your motivation. Good luck with it! I'll let you know what recipes I come across :)

  3. Do you have the old Broomfiled ward cookbook? If so, make the porckchop supper for 2. It's delicious! There is another chicken and veggie for 2 recipie in there as well. I'm on a different kind of diet...its called ONLY eat candy and icecream then take a multivitamin! Haha... not really but somedays it seems like that.
